Zucchini Quiche:

4 cups thinly sliced zucchini

1 large onion, thinly sliced

3 tablespoons butter

2 eggs

2 teaspoons dried parsley flakes

1/2 teaspoon salt

1/2 teaspoon each garlic powder, dried basil and oregano

1/4 teaspoon pepper

2 cups (8 ounces) part-skim shredded mozzarella cheese

2 teaspoons prepared dijon mustard

1 pastry shell (9 inches)

Saute the zucchini and onion in butter until tender; drain. In a large bowl, whisk the eggs, parsley, salt, garlic powder, basil, oregano and pepper. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; pour egg mixture over top. And trust me, the dijon on the pastry shell is a game changer. Here’s the simple olive oil-based pastry recipe I used. Just whisk the olive oil and water together and pour over flour and salt and mix with a fork. It balls together easily and you can press it into the quiche pan. I baked it at 400 for 35 minutes. It’s perfection.

1 cup flour

1/2 teaspoon salt

1/4 cup olive oil

1/4 cup cold water

All moved in. Mostly set up, furniture-wise, but no place for my bird collection. That’ll have to wait.

Bed acquired after much stress. Sheets purchased and in the wash. I feel more pulled together than in a long while.

Mike will be here to visit in 12 days (HOLYCRAPOMGIMFREAKINGOUT), and then starts the process of job hunting and getting ready for the move to Portland from MI. I’m glad he’s coming here, and I’m glad I’m not him. I don’t want to job hunt or move for a long time.

I need a measuring cup and pasta strainer. I suppose I can eat cereal for awhile.

Nora’s in heat, which is, not surprisingly, not any fun for either of us.

One more day off tomorrow. I think I’ll sleep all day. Next week will be a six-day work week, which is never fun. My employees need a vacation, though, so I’m happy to help.

Things are moving quickly and with purpose these days. Until recently I was still super pissed about being laid off, but considering how awesome things are becoming, I’ve decided to let the anger go and be grateful.

I need a nap.

My puppy is in heat. I feel so sorry for her and her grumpiness and her cuddliness and her poor...
